3 Ingredient Strawberry Shortcake

Hey you. I'm just sitting here stuffing my face with pound cake don't judge me, I threw some fruit in there. Nom, nom, nom. It's so good. Oh and did I mention easy? I'm not sharing mine, but if you're nice you could whip this up in a large bowl and grab two spoons for you and your honey.

You'll need a loaf of pound cake (or angel food cake). I used a store bought one...keyword simple.  Slice the cake into 2in. cubes and after rinsing your strawberries, slice them and sprinkle them with sugar. 
Place a layer of cake into a dish (or individual dishes). Add a layer of cool whip on top of the cake layer, then a layer of sliced strawberries. Repeat the process until all ingredients are gone. If you want, you can add strawberry glaze for a treat.

Here's What You'll Need:
1 loaf of pound cake (or angel food cake)
1pt of strawberries rinsed and sliced (stems removed)
2 tbsp sugar
1(8oz) tub of Coolwhip
Strawberry glaze (optional)

Here's What You Do:
1. Slice the cake into bite sized cubes.
2. Place strawberry slices in a bowl and sprinkle with sugar, tossing evenly to coat.
3. Place a layer of cake into each bowl (for individuals) or a large dish.
4. Add a layer of cool whip on top of cake.
5. Add a layer of strawberries on top of cool whip.
6. Repeat layers until all ingredients are used.
7. Drizzle with strawberry glaze (optional).
8. Chill until ready to serve.

Fruit Bread & Milk (Goody)

Nom. Nom. Nom.
It's a miracle there is still some apple bread left over from earlier this week. Usually, if by the grace of God there are any leftovers, I just cut it into cubes and then pour some warm milk over top. It's soooooo good.

The kids and I love it for a quick breakfast.

This is something I totally made up. Seriously. I'd never heard of it before and have done this for years with any type of muffin or fruit bread.

Today as I was searching online I foolishly learned, not only was I not alone in my love for this, but it actually has a name. Goody. See when you have a great idea you should totally patent it right away! :)
 Oddly enough, it seems to have an Irish origin. My father is (as he puts it 100%) Irish. Since no one in his family has shared this goodness with me, I feel cheated (hmph).

Now, I must give myself credit here, the only version I came across called for white bread (see my ancestors could've learned a thing or two from me).

First things, first.

Slice 2 thick pieces of the fruit bread (I do this with my banana bread also) and cut it into cubes. Then simply warm a little milk and pour it over the bread (you can even add cinnamon on top) and serve.

Here is the white bread version, I've read that it's better with stale bread (who would've thunk)?

Again, I have not tried that version, but maybe just maybe I'll use the kiddos as guinea pigs. I owe them one.

Here's What You'll Need:
2 thick slices of fruit bread
1 cup of very warm milk

Here's What You Do:
1. Cut bread into cubes.
2. Place cubes in a bowl
3. Heat milk til warm (you can do this in the microwave
4. Pour milk over bread cubes.
5. Top with additional cinnamon, brown sugar, butter or fruit if desired.
6. Serve.

Apple & Cinnamon Bread

It's finally September, which means my favorite season is approaching quickly. With Autumn comes apples! I recently planted an apple tree in my yard (along with a peach and a cherry tree), but I'm sure it will be decades before it bares fruit large enough to enjoy.

 My mother-in-law, however, has a huge apple tree in her front yard, which was planted by her father. The apples are finally ripe and ready to be picked. 
I wish I could say the apples from this recipe came from the tree planted by my wife's grandfather and give you a whole nostalgic story about warm apples and family roots, but the truth is if I tried to  reach for one of the apples on that tree, I'd probably get my hand popped. My mother in law is a little rotten (pun intended). {Seriously, she's a handful but I wouldn't change her for the world}.
  
Anyway, on to sweeter and better things. Brown sugar, cinnamon and red delicious apples make up this delightful recipe.
So cinnamony and good. 
Ready in just under an hour.

Here's What You'll Need:

5 Apples (I used red delicious apples) peeled, cored, and chopped
2 cups all purpose flour
1 cup light brown sugar
2 eggs
1/4 cup milk
1/2 cup butter; melted
1 tsp pure vanilla extract
2 tsp cinnamon
1/2 tsp nutmeg
1 tsp salt
1 & 1/2  tsp baking powder

Here's What You Do:

1.Preheat oven to 350F

2. In a large bowl place eggs, milk, butter, vanilla extract, and brown sugar. Stir until well combined.

3. In a medium bowl place flour, cinnamon, nutmeg, salt and baking powder. Stir.

4. Slowly add flour mixture to brown sugar mixture.

5. Fold in apples.

6. Spray a 9x5 in pan with cooking spray. Pour in bread mixture and place in oven for 50 mins or until a toothpick comes out clean.

Banana Bread

This ish is bananas, B-A-N-A-N-A-S!

Is it just me or does everyone hear Gwen Stefani's voice shout through their brain when spelling banana? Like I seriously can't spell it in my mind any other way. I'll admit when that song first came out I was totally hooked on it, actual banana fruit, not so much.

If I eat them, and I do, they have to be just a the point of yellowing. I'm kidding you not, I purposely buy them green, to allow me a few days to eat them.

But then there are life's rough patches. You know, when your perfect firm bananas have long outlived their life expectancy in my home. When they begin to look like this:

Just when you thought it was over, I'm here to share the good news. There are still two options. That's right, the first being the obvious, use them to up your basketball skills. The second, make some absolutely delicious banana bread. You decide. This week I had a little extra time on my hands so I chose the latter. 

This bread seriously is one of the best banana bread's I've had and its so simple to make. You're welcome.

Here's What You'll Need:

3 ripened bananas, mashed
1 large egg
1 cup granulated sugar
1 1/2 cups all purpose flour
1/4 cup melted butter
1 tsp baking powder
 1 tsp salt

Here's What You Do:

1. Preheat oven to 325 degrees (F)
2. In a large bowl combine mashed bananas, melted butter and egg. Stir.
3. In a separate bowl combine flour, sugar and baking powder. Stir.
4. Add flour mixture to banana mixture, stirring just til at batter consistency.
5. Add salt and stir in.
6. Grease a 9x5 in loaf pan.
7. Pour batter into greased pan and place in oven.
8. Bake for about 1 hour or until a tooth pick comes out clean.

Watermelon Jolly Rancher Snow Ice cream


 I awakened this morning to the sight of snow painting itself upon the streets, grass and trees, creating a winter white masterpiece. Large snowflakes propelled downward, just begging to be tasted by a warm open tongue.

My wife was in the kitchen preparing an tomato basil soup and the smell of slightly overcooked grill cheese sandwiches filled the air. The atmosphere sparked a nostalgic moment from my childhood.

A time when my father was still living at home with us, every winter having my sisters and I collect snow and when we returned he would create a delicious creamy treat.

 His recipe consisted of snow, whole milk, sugar and a spoon of vanilla. When I became a mom, I continued this tradition, making snow cream in a similar manner. I will always be a fan of the classic snow ice cream recipe, but I also enjoy experimenting in the kitchen and putting a little spin on things.  Here's how I created my watermelon jolly rancher snow cream.

 The kids and I went out and gathered 10-12 cups of fresh clean snow in a large bowl. When we came inside I opened and added a can of sweetened condensed milk.

While rummaging through the cabinet for sprinkles, a small box of watermelon flavoring jumped out at me. As I reached to place it back into the cabinet, I was hit with an aha moment.  I opened a packet of flavoring and added it to the mix.

Using a large spoon I stirred things until it was of ice cream consistency. The color was beautiful, but the taste would be the tell all. Oh my gosh! When I say freaking delicious...wow wee wow! The kids and I agree we have a winner.  Gourmet flavor for sure.


Here's what you'll need:

10-12 cups fresh clean snow
1 (14oz)can sweetened condensed milk
1 packet of Jolly Rancher water flavoring (you can find this in the grocery store next to Kool-aid, Crystal Light etc.)
Sprinkles (optional)

Here's what you do:

Place snow in a large bowl. Add sweetened condensed milk and jolly rancher flavoring.
Mix everything together well until the snow is of ice cream consistency.
If your ice cream seems a bit loose, continue to add snow in small increments until it reaches your preferred texture.

Enjoy immediately or place in freezer.

Tips:

If it's still snowing, just place your large bowl in the snow, so it can collect on its on.

Placing serving bowls in the freezer before serving keeps the cream from melting as quickly.

One packet of jolly rancher flavoring is enough. I've tried 2 packs and the taste was a bit overwhelming (even for the kiddos).
